One of the reasons Solaire’s Finestra is one of the most popular restaurants in the resort casino is because of the authentic Italian flavors served to its loyal patrons.

Chef Alan Marchetti, recounts how pasta is part of every meal in Italy, from normal meals to celebration.

“Each time I eat pasta, it brings me back to my hometown in Rome, Italy,” he confessed.

He added that his cooking was largely inspired by his grandmother, who makes the best gnocchi, and his Auntie Joanna, whose kitchen he frequented when he was young.

As he told the stories about his childhood and growing up with pasta, he demonstrated how he made pasta at Finestra, the reason why the restaurant’s Italian cuisine is among the most sought after in Metro Manila.
